Cucumber and Potato Salad
…with pumpkin seed oil
This refreshing salad is fantastic with a schnitzel, barbecues, or on a bed of butter lettuce. The pumpkin seed oil we use is from Austria, but you can buy pumpkin seed oil at Whole Foods.
2 English Cucumbers–peeled and thinly sliced
2 cloves garlic-minced
fresh ground black pepper
1/3 C white vinegar
1/3 C pumpkin seed Oil
1/3 t caraway seeds–if whole-chopped
- In a large bowl, place cucumber, salt lightly, toss, cover with plastic wrap and let rest in refrigerator for two hours. (This procedure will draw excess moisture from the cucumbers.)
- Drain off excess liquid from cucumber.
- Add garlic, black pepper, vinegar, pumpkin seed oil and caraway seeds. Toss. Add thinly sliced potatoes.
